Vegetable & Corn Chowder

This is a great recipe that Gosia makes which is easy to cook and very tasty.  We use chicken stock instead of veg stock and have tried it with different vegetables, depending what is in the cupboard.  Enjoy.

Serves 4


1 Tbsp vegetable oil

1 red onion, diced

1 red pepper, deseeded and diced

3 garlic cloves, crushed

300g /10oz potatoes, diced

50g /2oz broccoli florets

300g /10oz sweetcorn

2 Tbsp plain flour

600ml / 1 pint milk

300ml / half pint vegetable stock

75g Cheddar cheese, grated

Salt and pepper to taste

Heat the oil in a large pan and add the onion, red pepper, garlic and potatoes and saute for 2 – 3 mins over a low heat.  Add the flour and cook it out for 30 seconds or so, then gradually add the milk and stock.

Then add the rest of the vegetables and simmer for 20 minutes.  Season to taste.  Ladle the soup into bowls and top with a sprinkling of cheese.
